This coffee is a Papayo variety grown by Pastor Ordoñez at his farm, El Placer, in San Agustín, Colombia, at an elevation of 1800 meters. The cherries are fermented in sealed bags and hoppers before being depulped and dry fermented for 36 hours. After being washed multiple times, the coffee is dried on raised beds for up to one month. This lot offers a bright and refreshing flavor profile with notes of orange sorbet, lemongrass, and green papaya.
