Granja Paraíso 92 is a pioneering coffee estate in Cauca, Colombia, led by producer Wilton Benitez. This Java (P14 selection) is an heirloom Arabica variety cultivated at 1800 meters altitude in the volcanic highlands of Valle de Cauca. The coffee undergoes a highly controlled double-anaerobic washed process using sealed bioreactors with selected yeast strains and alternating hot and cold water exposure. Flavor notes include lemon custard, white peach, rose, yellow lemon vanilla cream, peach milk tea, banana, Fuji apple, and bergamot with a long, sweet, floral finish.
