This single-origin coffee is produced by María Belén Díaz at the Resinas farm in the Huila region of Colombia, at an altitude of 1800 meters. The coffee is of the Papayo variety and undergoes an extended fermentation washed process, involving a 36-hour pre-fermentation in cherry followed by a 36-hour fermentation in mucilage. This meticulous process results in a complex flavor profile featuring notes of panna cotta, pumpkin, physalis, clementine, melon, and vanilla. It is roasted as an omniroast, making it suitable for both espresso and filter brewing methods.
