This rare Papayo variety is a micro-lot from the El Placer farm in Huila, Colombia, grown by third-generation farmer Pastor Ordonez. Processed using a precise, multi-stage washed method, the coffee undergoes an initial cherry fermentation followed by a dry-fermentation of the beans. This results in a complex, low-acid profile with a velvety mouthfeel. Tasting notes include sweet mandarin, litchi, and pine nuts, with a clean, fruit-forward finish. It is a light-roast coffee suitable for both espresso and filter brewing methods.
