This coffee is a single-origin anaerobic natural from Acevedo, Huila, Colombia, grown at 1,670 meters altitude by producer Marlon Bolaños. The coffee is a mystery Ethiopian landrace variety. It undergoes a five-day anaerobic fermentation in sealed plastic tanks followed by two to three weeks of sun-drying on raised beds. The flavor profile is characterized by notes of stewed blueberry, black raspberry, and vanilla, offering a syrupy, creamy texture with a winey finish.
