This single-origin coffee is produced by Maria Rodriguez at Finca Betania in the Palestina region of Huila, Colombia. Grown by a network of smallholder families, this SL28 variety coffee undergoes a 32-hour anaerobic fermentation in sealed tanks before being washed and dried on raised beds for 20–25 days. The process is designed to enhance sweetness and clarity. The resulting cup features a profile characterized by citrus and malic acidity with a clean, sweet finish.
