This single-origin coffee is produced by Maria Rodriguez at Finca Betania in Palestina, Huila, Colombia. This lot features the SL28 variety, processed using a honey method where a thin layer of mucilage is retained on the parchment to enhance sweetness and body. The coffee is dried slowly on raised beds to concentrate sugars and preserve fruit characteristics, resulting in a clean and balanced cup.
