About This Coffee

This coffee is produced by Ildefonso Córdoba in Bruselas, Huila, Colombia, at an altitude of 1800 meters. It is a single-variety lot of the Bourbon Ají cultivar, which genetic testing has identified as an Ethiopian landrace. The coffee undergoes a unique washed anaerobic process involving a 60-hour whole cherry fermentation followed by a 70-hour fermentation of the pulped seeds in sealed barrels. It offers a complex flavor profile with notes of apricot, jelly donut, rose water, and citrus zest, presenting characteristics similar to a Gesha.
