The coffee undergoes a precise washed process where cherries are depulped and fermented in a bioreactor under CO2 for 48 hours with a natural starter 'must'. This meticulous method results in a distinctive flavor profile featuring notes of raspberry, black cherry, chocolate mousse, and spice.
