This 100% Pink Bourbon microlot undergoes dry anaerobic fermentation for 48 hours before pulping inside grainpro bags, then sun-dried on raised beds to 10.5% moisture content — an Anaerobic Honey process. Pink Bourbon is a variety currently under research, said to be a mutation that originated at 2,100 masl in San Adolfo, Huila. Tasting notes include pine, rose, chamomile, red apple, floral, and sweet chocolate.
