This single-origin coffee comes from El Mirador, a 31-hectare farm in El Portal, Huila, Colombia, owned by Elkin Guzman. The coffee features the Catiope variety, a hybrid of Caturra and Ethiopian lines obtained from an experimental station in Timbiquí-Cauca, known for its productivity and exceptional cup quality. The processing method involves fermentation in cherry for 96 to 144 hours with CO2 injection, followed by pulping and fermentation with must for an additional 72 to 96 hours, totaling 168 to 240 hours of fermentation. The coffee is then dried for 18 to 25 days, resulting in a bright, aromatic, floral, and sweet cup with enhanced sweetness, body, and fruity notes.
