This Colombian coffee comes from the Anserma cooperative in the Caldas region at 1800 meters altitude. It is a Castillo variety processed using an extended natural fermentation method. Coffee cherries undergo 96 hours of anaerobic fermentation in sealed barrels, followed by controlled drying in a Nuna Coffee box at 35-40°C for 100-120 hours. The flavor profile features orange wine, chocolate-covered cherries, and cocoa notes. The coffee is processed under the supervision of Luis Miguel, general manager of the cooperative, which brings together over two thousand small-scale producers. The controlled temperature and humidity regulation during processing ensures high clarity and sweet flavor tones.
