This single-origin coffee is produced by Edwin Norena at Finca Campo Hermoso in Circasia, Quindio, Colombia. The cherries undergo a complex processing method involving 24 hours of low-oxygen fermentation followed by 120 hours of carbonic maceration in tanks with added yeast, allulose, dehydrated fruit, and fresh raspberries. The coffee is then sun-dried in a controlled greenhouse for 10 days. This innovative cofermentation process results in a unique, highly technical flavor profile characterized by notes of berries, citrus, stone fruit, and floral aromatics.
