This single-origin coffee is produced by Edwin Norena at Finca Campo Hermoso in Circasia, Quindio, Colombia. The cherries undergo a complex processing method involving 24 hours of low-oxygen fermentation followed by 120 hours of carbonic maceration in tanks. During this stage, the coffee is co-fermented with a yeast culture, allulose, dehydrated fruit, and fresh raspberries. The beans are then sun-dried in a controlled greenhouse for 10 days. This innovative process results in a highly expressive cup profile.
