Colombia Blue Blossom

William's Roastery

About This Coffee

This coffee is a Sudan Rume variety from the Capilla del Rosario farm in Antioquia, Colombia, grown at an altitude of 1650-2000 meters. It undergoes a specialized 'Blue Blossom' washed process, involving a 2-day cherry fermentation followed by a 2-day fermentation in mucilage with selected microorganisms and yeasts. This complex process aims to produce a clean, balanced cup with high clarity and distinct floral characteristics. Tasting notes include basil, honeysuckle, mango, rosemary, green grape, tea-like qualities, and prosecco.
