This competition lot is produced by Jose Lasso at Finca El Diviso in Pitalito, Huila, Colombia. The coffee is 100% Typica Mejorado, a hybrid of Ethiopian landraces and Bourbon. It undergoes a complex processing method including pre-fermentation oxidation, two stages of anaerobic fermentation, and a thermal-shock step to stabilize aromatics, followed by sun-drying on raised beds. The resulting cup profile features notes of strawberry, passionfruit, rockmelon, and confectionary sweetness.
