An exceptionally rare single origin coffee from Tolima, Colombia, developed by Milton Monroy on his San Cayetano farm in San Juan de la China. This Geisha variety coffee is processed using natural anaerobic fermentation in 60 kg tanks for 84 hours with regular movement, followed by mechanical drying, extended raised bed drying over 24-32 days, and 45 days stabilization in grain pro bags. The unique processing and exceptional quality have made this microlot a competition finalist in Colombia.
