About This Coffee

This decaffeinated coffee from Chiapas, Mexico is processed using the Mountain Water Process at a facility called Descamex. The water-based decaffeination method removes caffeine while preserving flavor compounds by soaking green coffee in water, filtering out caffeine molecules, then reintroducing the flavor-rich solution to the beans. The coffee features Bourbon, Catuai, Caturra, and Typica varieties with flavor notes of chocolate taffy, dried fig, and marzipan. It is roasted to a medium-light level.
