This coffee is from Bruselas, Huila, Colombia, produced by Ildefonso Córdoba at 1800 meters altitude. It features the Bourbon Ají variety, which is actually an Ethiopian landrace rather than a true Bourbon. The coffee undergoes a washed anaerobic process with a 60-hour whole cherry fermentation followed by a 70-hour fermentation of pulped seeds in sealed barrels. The lot showcases layered fruit and floral aromas with lasting sweetness and complex characteristics. Tasting notes include strawberry rhubarb jam, earl grey tea, and peach. The producer is part of Los Guácharos, a group of quality-oriented producers, and serves as the group's seed guru.
