This coffee is an SL9 variety from the Chavez Estate in the Hatumpampa region of Inkawasi, Peru, grown at an altitude of 2145 meters. It is processed using an anaerobic washed method, where cherries are depulped and fermented for 10 days before washing and drying. The flavor profile features complex citrus notes of yuzu, bright green grape, delicate yellow florals, and the gentle sweetness of honeydew. This light roast is recommended to be rested for 4-6 weeks from the roast date.
Founded in 2020 at the onset of the COVID 19 pandemic, Moonwake Coffee Roasters emerged from the passion of two former tech engineers, Ming Wood from Tesla and Mabel Yeung from Meta. What began as Ming's personal coffee project within Tesla's internal coffee club evolved into a full roastery operation after both founders chose to leave their tech careers to pursue coffee full time between 2023 and 2024.
