The coffee is the Mundo Maya F1 hybrid (Timor × Ethiopian heirloom) processed as a natural anaerobic: 72 hours of controlled fermentation in sealed tanks followed by slow drying on raised beds. The cup is fruit-forward and juicy with blood orange sparkle, soft melon, and cherry sweetness; roasted for an espresso-forward profile.
