Grown at an altitude between 900 and 1100 meters, this lot undergoes a unique yeast fermentation process where cherries are fermented in closed tanks for 72 hours using Saccharomyces cerevisiae. The resulting cup profile is characterized by bright, fruity acidity, high sweetness, and a creamy body, with distinct tasting notes of plum, papaya, and custard.
