Single-origin coffee from Cabeceras, Huila, Colombia, grown at 1,550 meters elevation by producer Beto Narvaez. The Papayo Amarillo (Yellow Papaya) variety is processed using a multi-stage thermal-shock washed method. Beto ferments ripe cherries for 24 hours in the fruit, depulps them, then ferments again for 48 hours in sealed bags before washing with hot water (45-50°C) to create a thermal shock that seals the seed. The coffee dries under shade for approximately three weeks. Tasting notes include floral pineapple, passionfruit, complex spices, and golden raspberry.
