This coffee is sourced from the Anasora Site in the South Guji Zone of Ethiopia, grown at an altitude of 2200-2300 meters. It is a landrace variety processed using the natural method, involving a 10-hour open-air fermentation followed by 3-4 weeks of drying on raised African beds. The flavor profile features notes of blackberry, mandarin orange, and black tea, offering a balanced and complex cup with a gentle, tea-like finish. This light roast is recommended to be rested for 3-4 weeks from the roast date.
Founded in 2020 at the onset of the COVID 19 pandemic, Moonwake Coffee Roasters emerged from the passion of two former tech engineers, Ming Wood from Tesla and Mabel Yeung from Meta. What began as Ming's personal coffee project within Tesla's internal coffee club evolved into a full roastery operation after both founders chose to leave their tech careers to pursue coffee full time between 2023 and 2024. Moonwake represents a growing movement of technologists who discovered that coffee roasting offers greater fulfillment than their previous careers, channeling engineering precision into specialty coffee.
