About This Coffee

This coffee is a Chiroso variety grown by Víctor Florez at La Cartagena farm in Urrao, Antioquia, Colombia, at an elevation of 1900 meters. The cherries are hand-harvested and float-sorted, followed by a 48-hour whole cherry fermentation. After depulping, the coffee undergoes an additional 60–66 hour fermentation in open tanks before being washed and dried on raised beds for 2–4 weeks. This lot is known for its high-elevation profile, which allows for extended maturation and the accumulation of complex sugars and aromatic precursors.
