This coffee is from Finca La Linda in Bolivia, located in the Amazon jungle. It is cultivated at approximately 1500 meters altitude. The variety is red Caturra. The processing involves hand-picking at full maturity, flotation and hand sorting to remove under or overripe cherries, mechanical depulping, anaerobic fermentation in tanks maintained below 25 degrees Celsius, washing to remove remaining mucilage, and slow controlled mechanical drying for 110 hours following a day-night rhythm cycle. The farm is part of Agricafé's operations, where over 60% of the land is preserved as a natural reserve. This coffee offers fruity and delicate tasting notes with complex characteristics suitable for both espresso and filter preparation.
What began in 2014 as Le Pista Cafe Mobile, a bicycle powered coffee cart created by Maxime Richard, has grown into a Montreal roastery with three brick and mortar locations.
