Natural processed Catuai from Silvio Sanchez's Santa Teresa de Mogoton farm in Nueva Segovia, Nicaragua, at 1500 meters elevation. The cherries are dried in full sun at the Expocampo Mill. This dark roast features a chocolate mousse-like mouthfeel with rich dark chocolate flavor, subtle blackberry jam notes from the natural process, and a clean, full body. Suitable for espresso and filter brewing.
Founded in 2020 at the onset of the COVID 19 pandemic, Moonwake Coffee Roasters emerged from the passion of two former tech engineers, Ming Wood from Tesla and Mabel Yeung from Meta. What began as Ming's personal coffee project within Tesla's internal coffee club evolved into a full roastery operation after both founders chose to leave their tech careers to pursue coffee full time between 2023 and 2024. Moonwake represents a growing movement of technologists who discovered that coffee roasting offers greater fulfillment than their previous careers, channeling engineering precision into specialty coffee.
