Santa Monica is a Colombia-based coffee from a family-managed farm led by Jairo Arcila. The lot features the Chiroso variety and an EF2 Natural processing sequence, including 24 hours of dry aerobic fermentation and 50 hours of anaerobic fermentation in GrainPro bags below 22°C, followed by raised-bed drying for about 18 days. POMA collaborates on fermentation, processing techniques, and agronomic research to develop cup complexity and clarity.
