Correcaminos is a washed El Salvador coffee from Apaneca–Ilamatepec grown at 1,500 m (Finca San Francisco) by Andrés Salaverría. The lot is SL28 variety, processed with an anaerobic 48-hour fermentation with grape, then depulped and soaked for 10 hours. Tasting notes highlight blackberry, 80% dark chocolate and peach, with medium tartaric/lactic acidity and a creamy body; roast profile is prepared for filter brewing.
Co-founded by Carlos Moral, whose coffee lineage traces back to his father Rafa's 1979 establishment of Mare Terra coffee imports, Hidden Coffee Roasters emerged from a dynasty dedicated to transforming Spain's understanding of specialty coffee. Operating from Barcelona's Les Corts neighborhood on a Giesen roaster, they represent a new generation of Spanish roasters who prioritize producer relationships and value chain transparency.
