Delfín Rosado is a single-origin Colombian coffee from Quindío produced by Diofanor Ruiz (La Divisa). Grown around 1,950–2,000 m altitude and composed of 100% Pink Bourbon, the lot is washed: cherries are fermented in water for 30 hours, depulped, washed and dried under controlled conditions. The roast is prepared for espresso, yielding a creamy body with fruity tasting notes of strawberry milkshake, lemon honey and banana.
Co-founded by Carlos Moral, whose coffee lineage traces back to his father Rafa's 1979 establishment of Mare Terra coffee imports, Hidden Coffee Roasters emerged from a dynasty dedicated to transforming Spain's understanding of specialty coffee. Operating from Barcelona's Les Corts neighborhood on a Giesen roaster, they represent a new generation of Spanish roasters who prioritize producer relationships and value chain transparency.
