About This Coffee

This coffee originates from Cutervo province in the Cajamarca department of Peru, cultivated by smallholder farmers José Manuel Silva, Julia Paredes, Wilder Paredes, Wilson Vásquez, Marino Toro, and Dora Toro. Grown at altitudes between 1,600-2,000 meters above sea level, the coffee consists of Caturra Rojo, Caturra Amarillo, and Pache varieties. The beans undergo washed processing with a 48-hour fermentation period followed by approximately 15 days of sun drying. The coffee is cultivated using traditional agroforestry systems that combine coffee plants with native trees and fruit plants. This lot scores 86 points and features tropical notes, honey, and chocolate flavors with a medium roast profile.

Animal Coffee

Animal Coffee started as a small specialty coffee space in Barcelona's Sarria neighbourhood in 2015 and began roasting its own beans the following year. They work exclusively with 100% Arabica, using a light roasting approach adapted to each origin to draw out its characteristic notes. Roasting happens weekly to keep deliveries as fresh as possible. Beyond the roastery, they run a barista training centre offering courses from beginner to advanced levels, as well as consultancy for businesses setting up coffee operations. They supply roasted beans to offices and private customers across Spain.
