This coffee undergoes an intensive double fermentation process: 48 hours in anoxic conditions, followed by 48 hours of fermentation with mucilage, yeast inoculation, and a final thermal shock with hot water. This advanced processing results in a highly expressive, citrus-forward cup. The flavor profile features distinct notes of lime leaf, Meyer lemon, and black tea.
