This coffee is a Gesha variety grown by Paul and Kevin Doyle at their farm in Marsella, Risaralda, Colombia, at an elevation of 1700 meters. It undergoes a hybrid washed process, where fermentation begins in the whole cherry before being pulped and fermented in mucilage, then washed and shade-dried. The flavor profile is complex and expressive, featuring notes of passionfruit, strawberry yogurt, and orange blossom. This light roast offers a clean, floral structure with a balanced, juicy character.
Founded in 2020 at the onset of the COVID 19 pandemic, Moonwake Coffee Roasters emerged from the passion of two former tech engineers, Ming Wood from Tesla and Mabel Yeung from Meta. What began as Ming's personal coffee project within Tesla's internal coffee club evolved into a full roastery operation after both founders chose to leave their tech careers to pursue coffee full time between 2023 and 2024. Moonwake represents a growing movement of technologists who discovered that coffee roasting offers greater fulfillment than their previous careers, channeling engineering precision into specialty coffee.
