This Gesha coffee is from the ALESSA plot located in the MIMA ESTATE farm in Alto Quiel, Panama, at the foothills of the Baru Volcano at 1850 meters above sea level. The plot covers approximately 2 hectares of volcanic soil where Geisha Green Tip variety grows, cultivated in a forest of Guabos and Cedars with 70% shade adjacent to a protected park area. Manually harvested on February 6th, 2024, selecting completely ripe cherries. After flotation to remove low-density beans, the coffee was mechanically pulped and fermented with mucilage for 16 hours using wild yeast from the farm, with temperatures ranging from 15 to 20 degrees Celsius. Following fermentation, it was washed with pressurized water and sun-dried in a greenhouse on African beds for approximately 7 days. The coffee is named after Alessa, granddaughter of farm founder Eugene.
