Cathedral Coffee was founded in 2013 in Portland, Oregon by Austen Tanner, Nate Dillon, and Matthieu Galizia. The team brought roasting in house in early 2022, starting with a 3 kilo Mill City Roasters machine before doubling capacity with a 6 kilo Giesen at their Saint Helens roastery midway between Portland and Scappoose.
