Produced by 173 smallholder farmers, the coffee is a Bourbon variety processed using a washed method. The cherries are sorted, fermented for one day, pulped, and then pre-dried in the shade for 5 days before being fully dried on raised beds in the sun for 2-3 weeks. Pharmacie Coffee Roasters

Pharmacie Coffee Roasters was founded by Rick Curtis, who spent over five years running specialty coffee shops in Brighton and Hove before opening the roastery in Lewes, East Sussex, in 2021. The name was inspired by a 1970s French pharmacie sign Rick kept behind his couch and the "drugs" signage at Stumptown in Portland, which had shaped his coffee thinking. The move to Lewes came at the suggestion of Danny Tapper from Beak Brewery, who pointed Rick to an old warehouse at the Cliffe Industrial Estate. Rick roasts on a Giesen W15 and also offers a co roasting service, hiring out the equipment to other coffee professionals. The space hosts a seven day brew bar, social bike rides, live music, art exhibitions, and training sessions.
