This single-origin coffee is a Yellow Caturra variety grown at La Joya in Ixhuacán de los Reyes, Veracruz, Mexico, at an altitude of 1,420 meters. It undergoes a meticulous natural process, including a 140-hour fermentation in GP bags using the Jade Imperial approach, followed by 20 days of drying on raised African beds in a forced-ventilation tunnel and a 90-day stabilization period. The cup profile features notes of red apple, lime, watermelon, and goji berry, offering a clean and well-structured experience.
