It is processed using a semi-washed (honey) method, where the cherry is pulped but a layer of mucilage is left on the parchment during drying. After harvest, the cherries rest for 24 hours before pulping to develop natural sugars. Drying occurs in Benancio’s solar dryer under controlled conditions, yielding a cup described as sweet and silky smooth.
