This rare Sidra lot is produced by Marlon Rojas at Finca La Reserva in the Palestina region of Huila, Colombia, at an altitude of 1,650 to 1,750 meters. The coffee undergoes a meticulous process involving a 24-hour pre-fermentation, depulping, and a 48-hour anaerobic fermentation in sealed tanks, followed by 15 days of drying on raised beds. This Sidra variety offers a complex and elegant flavor profile characterized by notes of physalis, kiwi, and an effervescent quality, providing a balance of floral clarity, tropical fruit, and layered sweetness.
