This coffee is produced by Marcelo Assis and Flavio Silva in the Campos Altos region of Brazil. It is a Paraïso variety coffee processed using an anaerobic natural method, involving fermentation in temperature-controlled stainless steel tanks followed by drying on cement patios. The cup profile features notes of orange wine, lemon verbena, plum, and Luxardo cherry, offering a complex sweetness and smooth mouthfeel that distinguishes it from traditional Brazilian profiles. This light roast is noted for its floral characteristics and overall drinkability.
