This Mandosi Decaf coffee is sourced from the Huila region of Colombia, grown at an altitude between 1400 and 2000 meters. It is a blend of Caturra, Castillo, and Colombia varieties. The coffee undergoes an EA (Ethyl Acetate) decaffeination process, which uses a naturally occurring ester to remove caffeine while preserving the bean's integrity. This process involves steaming the green coffee to open its pores, followed by a solvent bath to bond with and extract the caffeine, resulting in a decaffeinated coffee ready for roasting.
Based in Zürich, AILA was founded with the mission to build a complete coffee culture rather than just a roastery. They are deeply committed to direct trade, fostering strong relationships with their producers to ensure quality and fairness. Their roasting approach is designed to tell the story of the beans and the people behind them.
