Cherries are harvested at peak ripeness, rested in barrels for 24 hours, and then co-fermented for 48 hours with fresh mandarin, glucose, natural mandarin extract, and rose petals. After washing, the beans are sun-dried on patios followed by a controlled drying process in silos. The resulting cup offers vibrant citrus aromatics and delicate floral notes, with tasting notes of orange blossom, clementine, sugarcane, and rosemary.
