This lot is a Caturra with a classic washed process from Antioquia, specifically the town of Giraldo. Here at almost 2000m above sea level the Caturra grows particularly well, and when treated with a simple washed process and dried on raised beds, there is that classic Washed Colombian profile we're after. You can expect a Nutty, Fruity, and Chocolatey profile with great sweetness and a clean mouthfeel from this lot, thriving both in espresso and in filter.

Matt's background spans aircraft engineering in Australia and years of competition at the highest level of specialty coffee. The team, which includes Sierra Yeo (2022 UK Brewers Cup Champion), roasts exclusively on Stronghold electric roasters powered by 100% renewable electricity. Every batch is roasted to order, with a deliberate focus on brightness, sweetness, and flavor. Rose sources top end specialty lots through direct relationships with farmers in Panama, Colombia, Ecuador, Ethiopia, China, and Indonesia. The name represents a duality Matt finds in great coffee: something simple and familiar on the surface, yet layered and complex underneath. It is a small, independent roastery with no shortcuts and no cheap blends.
