This coffee is from La Plata, Huila, Colombia, produced by smallholder farmers and processed at the Los Patios wet mill. The Castillo variety undergoes 12 hours of aerobic fermentation in cherry, then a co-fermentation with commercial peach concentrate and a proprietary solution before drying for 12–16 days. Tasting notes emphasize intense peach aromatics, tropical punch, sweet creamy marshmallow, and a peach boba tea-like sweetness.
