This coffee is a Honduras SHG EP from the Siguatepeque region, specifically from Los Geranios, grown at 1200-1600 meters altitude in the Comayagua and Montecillos mountain areas. It is a washed Arabica coffee produced by smallholder farmers who are members of the COHORSIL cooperative, founded in 1980. The varieties are Catuaí, Parainema, and IHCAFE-90. The coffee features flavor notes of citrus, dark chocolate, and apricot with a soft and balanced body. During harvest, ripe coffee cherries are handpicked, then depulped, fermented, and washed with clean water before being carefully dried on patios to approximately 12.5% moisture content.
