About This Coffee

This coffee is produced at Finca Las Palmas, a 2-hectare farm in Bruselas, Pitalito, Huila, Colombia, at 1,840 meters altitude. Managed by Abelardo Alvear, this Bourbon Aji variety is processed using an anaerobic method: cherries are fermented in sealed bags for 38 hours, depulped, and fermented again in tanks for 80 hours, followed by 21 days of patio drying. The cup offers vibrant citrus and stone fruit notes with pronounced sweetness and a lively acidity.

Rose Coffee Roasters was founded in 2022 in Zurich by Matt Winton, the 2021 World Brewers Cup Champion, together with Frederic Brunner. Matt's background spans aircraft engineering in Australia and years of competition at the highest level of specialty coffee. The team, which includes Sierra Yeo (2022 UK Brewers Cup Champion), roasts exclusively on Stronghold electric roasters powered by 100% renewable electricity. Every batch is roasted to order, with a deliberate focus on brightness, sweetness, and flavor. Rose sources top end specialty lots through direct relationships with farmers in Panama, Colombia, Ecuador, Ethiopia, China, and Indonesia. The name represents a duality Matt finds in great coffee: something simple and familiar on the surface, yet layered and complex underneath. It is a small, independent roastery with no shortcuts and no cheap blends.
