La Valentina is a natural processed coffee from Finca La Valentina, located in the Montecillos mountain region near the town of Tutule in the Marcala coffee region of Honduras. Grown at approximately 1,600 meters altitude on slopes shaded by citrus and banana trees, the coffee is produced by Carlos Mejía. Varieties include Pacas and Yellow Catuai. Cherries were dry-fermented for several days, then slowly dried on African beds for 10–15 days. Flavor notes include Mozart balls (chocolate-marzipan), dark cherry, and red wine.
Opened at the end of 2021 in České Budějovice by a group of friends, they roast on a 15kg Giesen machine in an open space roastery with espresso bar, featuring flowery herbarium like packaging that represents the flavor profiles. Head roaster Petr brings years of experience. Their coffee is known for floral and fruity notes, and they've opened their first espresso bar at Budějovice train station. The team values diversity in coffee, rejecting the notion of one right taste.
