A Colombian single-origin coffee from Cundinamarca, grown at 1750 MASL on La Palma y El Tucán farm. The Sidra variety undergoes a Bioinnovation process: anaerobic fermentation in buried clay pots with microbial-rich compost for 107 hours, followed by 36 hours of aerobic mucilage oxidation, then rinsed and dried on raised beds for 31 days. Flavor profile includes spiced pear, tepache, grilled peach, and dark honey with a round, full body and pronounced sweetness.
