This coffee is produced by Jairo Arcila in Colombia using the Papayo variety. It undergoes a unique EF2 processing method, which includes a 24-hour aerobic fermentation followed by a 24-hour anaerobic fermentation before pulping and drying. The flavor profile is complex and elegant, featuring notes of baked peach, tangerine, raspberry, sugarcane, and white flowers. It is a balanced, sugary, and juicy cup.

Ghost Coffee Collab opened in October 2021 in Pittsburgh's Uptown neighborhood, founded by Joe Burns, a nationally ranked barista with over thirteen years in the coffee industry. The roastery is built around a fascination with fermentation and experimental processing, offering coffees that showcase techniques like extended anaerobic fermentation, co fermentation, and submerged tank processing. New releases drop on the first of each month, giving the lineup a rotating, discovery driven character that rewards curiosity. Burns and his team, each with at least a decade of barista experience, roast everything on site and work with producers who share their interest in pushing processing boundaries. The result is a roastery where every bag tells a story about what happens between harvest and roast.
