This coffee is produced by Ivan and Rose dos Santos at Sitio Seriema farm in the São Paulo region of Brazil at 1250 meters altitude. It is a Catuai variety processed using an anaerobic natural method, where whole cherries are fermented in a sealed environment for 36 hours before being patio-dried. The flavor profile is characterized by notes of fig jam, nougat, prune, and chocolate, offering a velvety body and a gentle boozy quality from the fermentation process.
